We ended up using my chicken breasts from the Kroger sale this week on Saturday afternoon to do grilled chicken sandwiches on whole wheat kaiser rolls and a green garden salad. We had one chicken breast left over, so I am going to shred it and put it into the Chicken Thai Curry Soup on Sunday afternoon for an easy dinner. This soup is so good and it is a meal in one pot — it has starch, veggies and the protein!
I still have quite a few of the organic potatoes in my crisper and I need to use them up this week. Plus I have a few peppers left from the garden, and about 3 dozen eggs from Aldi’s great $.49/dozen sale. So I am looking for something good to do. I came up with a Western Omelet, send me a recipe if you have a good one! My brain is fried tonight.

Meal Plan for the week of October 5th:
Sunday:
(Lunch) Scrambled Egg Sandwiches, cantaloupe, grape juice
(Dinner) Chicken Thai Curry Soup
Monday: Jambalaya, garlic cheese toast, green garden salad
Tuesday: Loaded Baked Potato, green salad
Wednesday: Baked Lemon Tilapia, lemon spaghetti and steamed broccoli with whole wheat rolls
Thursday: Western Omelet , whole wheat toast, apples & cantaloupe
Friday: Homemade Spaghetti, green salad and garlic cheese toast
Saturday: Ribeye steaks, baked potato, apple walnut salad, garlic toast

Lunches:
Turkey Sandwiches
Grilled Cheese Sandwiches, sliced apples
PB&J, sliced apples
Leftovers – baked potatoes, spaghetti, jambalaya

Breakfast:
freezer waffles w/ frozen strawberries
strawberry smoothie, whole wheat toast w/ peanut butter
cereal, whole wheat toast w/ jelly
breakfast burrito (egg, cheese, & salsa)
egg sandwich w/ cheese, fruit
oatmeal, whole wheat toast, sliced apples

hummus with crackers and veggies
homemade popcorn or mini-pouches
smoothies
apples w/ peanut butter

there was no form listed below your coupon swap announcement…..and no way to email you…..just wanted to let you know….it may be just on my computer b/c there was just a big blank space……
i’m guessing that due to the swap you are not going to have the class on Drugstore deals that you had mentioned on facebook….? i was hoping to attend so i’d love to know when the next one is that you have planned….

ok, ignore my previous email….the form for the coupon swap just popped up…..
idea for leftover eggs – yummy quiche, a lady brought one to Sunday school yesterday and I was craving it so I used some spinach I got on sale at Kroger, the egg beaters I got on sale at publix, some mushrooms, green onions, green peppers, and cheese all baked in a deep dish pie shell. YUMMY!!!
Made 3 froze one – having leftovers for breakfast this morning!
